Ingredients
3/4cupwater
3/4cupgranulated sugar
8cupswatermelon chunks
1cuplime juicefreshly squeezed
20ounceswater
Instructions
In a small sauce pan, add the 3/4 cup water and bring to a boil. Add the sugar and cook 2-3 minutes until the sugar dissolves. Turn off the heat and set aside.
In a food processor or blender, blend the watermelon chunks to a puree and release all the liquid. Pour through a strainer into a pitcher.
Add the lime juice, sugar and water mixture and the remaining water.
Stir well and chill covered for up to two days.

Freeze in popsicle molds for a healthy cool treat for the kids too!
