Line a 9x13 cookie sheet with parchment or wax paper. Set aside.
Mix the base mix ingredients together in a large bowl.* (see note)
Add variation ingredients as desired.
In a medium sauce pan, heat the honey, brown sugar, salt, and coconut oil.
Bring to a boil and cook one minute until the sugar dissolves.
Remove from heat and add vanilla.
Pour equal amounts of the hot liquid between your divided base mixes and mix well. Pour the content of each mix onto the cookie sheet and spread evenly. It's okay if the flavors touch.
Using a second cookie sheet, press down on the granola very firmly until even and flattened.
Allow to cool, then cut bars into 2 inch by 4 inch bars. Wrap in plastic wrap and store in a covered container 1 to 2 weeks.
Notes
*If you want to make all of the same flavor granola bars, keep the base mix together. If making more than one kind,divide equally among other bowls. I divided mine into thirds.
