Hi Raquel–you mean just one 9 inch pan or in general just larger 9 inch pans? If so, then I’d guess you’d need three or even four nine inch pans. –Rachel

I’d like to double the recipe. Is a 9 by 1.5 inch round cake pan big enough or should I go bigger?

In reply to Tanni. It will change the texture of the cake. Sugar isn't just for sweetness but also for structure. I've never tested it with that much of a sugar reduction. --Rachel

I love this cake!! I want to make a 14” 4 layer cake so should I double the recipe or triple the recipe?

In reply to Jamie. Jamie, you could add a little coconut extract for the flavor. if she doesn't like that add about 1/2 a teaspoon of almond extract. I often add almond extract, it gives it a great flavor.
